Make the baray two days ahead. On the day or even the night before, you can assemble it up in the dish and cling film it and store it in the fridge.

Boil the chickpeas a day before.
Add chopped onions, tomatoes, cucumber, tamarind sauces, chaat masala, lemon juices, and salt, and give it a good mix up and serve with a garnishing of mint chutney, fresh mint leaves, and lemon wedges.
